Thyme, Roast Tomato Barley Rissotto with Chicken Drumsticks
Researchers have discovered that an antioxidant called lycopene, found in high concentrations in tomato products may prevent the internal scarring caused by endometriosis. Experiments by U.S. scientists found lycopene cut up to 90 per cent the chemical activity that leads to the build-up of scar tissue. Lycopene is a nutrient that gives the red colour to tomatoes, watermelon and pink grapefruit.
In a study released at the American Society of Reproductive Medicine conference in San Francisco, adhesive tissues caused by endometriosis were treated with lycopene in the laboratory. The study was undertaken on culture cells, by Dr Dbouk, the cultures measured the formation of proteins which the body uses as markers for initiating the adhesion cell growth, in the cultures these proteins were reduced by 80 – 90%.
Dr Tarek Dbouk, a researcher at Wayne State University in Detroit, Michigan, said the amount used in the experiments was compatible with consumption of a lycopene-rich diet.
- Cold press coconut oil - 4 tablespoons - Melted
- Garlic - whole cloves - 2 - minced
- Tomato - medium sized - 8 medium sized - cut around the equator
- Tomato Passata - 1 Cup
- Smoky Paprika - 1 teaspoon
- Cayenne pepper - 1/8 teaspoon
- Thyme - 3 sprigs
- Lemon Zest - Finely Grated - 2 teaspoons
- Maple syrup - 2 tablespoons
- Pearl Barley - well rinsed in cold water and drained - 1 1/2 Cup
- Chicken stock - 6 cups
- Red Capsicum - finely diced - 1
- Onions - finely diced - 2
- Chicken drumstick - 12
Place the tomatoes in a large roasting pan and drizzle of the melted coconut oil, bake on 220C / 428F for 30 – 40 until brown and skins have blistered.
Mean while, heat 2 tablespoons of the coconut oil over medium heat in a large saucepan brown off chicken and set aside.
Using the same pan, melt another 2 tablespoons of the coconut oil and sauté the garlic, onion and capsicum for about two minutes, or until golden.
Add the Passata, paprika, thyme, lemon zest, maple syrup, barley, season with salt and pepper and cook for a further minute.
Add the stock, and return the chicken drumsticks to the pan, bring to the boil and reduce heat simmer for 45 minutes, stirring occasionally to ensure the barley does not stick to the bottom of the pan.
Make sure there is always just enough liquid left in the saucepan to cook the barley.
Once the barley is cooked, gently add the roasted tomatoes.
Serve into bowls garnishing with either, flat parsley, goats feta, plain un-sweeted Greek yoghurt.
